On the square of Pueblo Garzón, inside an old general store, Francis Mallmann created the project that turned this rural village into a gastronomic pilgrimage: a restaurant of open fires with just five rooms upstairs. Sleeping here means entering the Mallmann world with nothing in between: the rate includes full board with wines, and the entire village — dirt streets, low houses, countryside silence — works as an extension of the hotel.

It's an experience more than a place to stay: you come for the embers, the long breakfasts, the pool in the garden and the feeling of having found a secret 40 minutes from José Ignacio. It's aimed at food lovers, couples and travellers who already know the coast and want the inland counterpoint. With only five rooms, book well ahead in high season.
