Marismo is one of those places that capture the spirit of José Ignacio: a restaurant tucked away on Calle La Farola, at km 185 of Ruta 10, where you dine in the open air with sand underfoot, candles flickering and fires burning all around. Federico Desseno's project has been a fixture of the summer season for years, and the kitchen revolves around live embers and a wood-fired oven.

The menu leans on the day's catch, lamb, fire-roasted vegetables and breads baked over the same flames, with Mediterranean touches and plenty of homespun character. Book ahead and arrive early to enjoy the sunset among the pines.
