El Chiringo is a "parador", a beach restaurant, on Playa Brava in José Ignacio. According to the restaurant itself, it started as a two-by-two-metre kiosk and in high season receives up to 500 people a day. The building is wood, canvas and sand, and the kitchen describes its cooking as based on local produce: seafood, Mediterranean-inspired dishes and empanadas from a wood-fired oven.

It opens daily from 10 am to 8 pm during the season, which runs from December to Easter (Semana Santa, the week before Easter Sunday, is a national holiday week in Uruguay and the last peak of the beach season), and schedules live music, yoga classes and events from midday to sunset.
