Gurisa is the open-fire restaurant of Mendoza-born chef Lucas Bustos in La Juanita, the stretch of coast just before José Ignacio, and it operates only a few weeks a year: according to the restaurant itself, roughly from late December to late February, which is the southern-hemisphere summer. He runs it together with Agustina Vela, with outdoor tables and the fires in view.

The cooking it describes crosses open fire with local, seasonal produce: lamb braised in clay pots, grilled catch of the day and vegetables that change with what is available.
