Gurisa is the summer project of Mendoza-born chef Lucas Bustos in La Juanita, open for just a few weeks each year, from late December to late February. That short-season logic gives it the air of an event: open-air tables, fires in full view, and unhurried service run together with Agustina Vela.

The cooking crosses open-fire tradition with local, seasonal produce: lamb braised in clay pots, grilled catch of the day, and vegetables that shift with whatever is at hand. Bustos, who opened Gurisa Madrid in 2025, brings back what he has learned abroad each summer. If you're coming in January, book well ahead: it's one of the most sought-after tables in the area.
